Inspired

You dearies sure know how to show a girl some cake love! Thank you for your wonderful and unique cake suggestions! I've got all kinds of ideas swimming around in my head and have spent way to much time thinking about what this cake would taste like with that frosting!

Perhaps I've failed to mention that I'm no good at all when it comes to following one recipe verbatim. While I'm not haphazard in the kitchen, neither am I scientific. Cooking this way can get a girl into trouble sometimes.

I'll probably be requesting recipes from some of you very soon. However, I must admit that after flipping through some cookbooks a snowy white coconut cake sounds {and looks} pretty tempting. Of course I'm wondering if I can use this cake recipe with that frosting recipe, but add a little smidgen of this and leave out all of that. Somebody make me stop... I've got to cook by the rules this time, other people are going to be eating this cake.

{About the photo... my mother-in-law has a friend who crochets pot scrubbers using plastic netting. She stopped by earlier this week to give me some. Aren't they darling?! I can hardly bring myself to use them. The happy colors look so refreshing next to my kitchen sink.}

I cook and bake in exactly the same way! So much more fun that way, and I get the feeling that I'm being creative :-)

When is the dinner party? My mom has an AMAZING coconut sour cream cake recipe that is always "the talk" whenever she makes it. It's her mother-in-law's and daughter-in-law's favorite. The only thing is it's one you make three to five days ahead and leave sitting in the fridge getting all moist and yummy and irresistible! Let me know if you'd like her to e-mail you the recipe. Love the scrubbers!

Creatively adding this and taking away that is great for cooking....but when you're baking, it's a little more dangerous! :) Can't wait to see what you come up with! Coconut cake sounds wonderful!

Guess what... it looks like I'll need to make two! cakes. The coconut cake is a for sure, perhaps German chocolate for the second one. My mom suggested lemon. There are SO MANY to choose between.

Peggy -- I don't have the first clue as to how they are made but I'll talk to my mother-in-law and see what I can find out...

Peggy -- I just googled "homemade crocheted pot scrubbers" and found all kinds of patterns and tutorials. Look for the ones that specify using plastic/nylon netting.

I cook 'by the rules' the first time I make something from a recipe . . . then the next time all bets are off and I modify it to whatever. I once started out with a recipe for Lamb Chops Madeira (sp)--a sweet, fruity wine sauce over seared lamb--and from there went to lamb chops with dried fruit sauce and from there to mint-and-herb-crusted lamb . . . all because of one recipe. Did the same thing with a glazed lemon bread recipe and tried it with various combos of citrus (tangerine and lime combo is kickin!). Good luck! -B

Ok, if you're looking for coconut cake, this recipe rocks! I don't get to make it enough 'cause my husband doesn't like coconut.

1 box Duncan Hines butter recipe yellow cake mix, baked in two layers, then split, or baked in 4 very thin layers

Mix: 12 oz. frozen coconut, thawed
1 1/2 c. sugar
1 1/2 c. sour cream

Spread this mixture between the first 3 layers, reserving 1 c. for the frosting. Mix the reserved c. with 8 oz. of Cool Whip, and frost the top and sides. Done!

This has to be refridgerated, obviously... =)

I showed my mother the picture of the pot scrubbers and she was wondering if you know where your MIL got the plastic netting? We found quite a few scrubbers online but would love to know where to get the netting! Thanks!
