
I thought soup season had passed, but {lucky for us} the last few days have been rainy and cool... and {not so lucky for us} we've had a houseful of sickies. Soup has been essential; this week we've enjoyed savory Tex-Mex Turkey Soup. What can I say? There was leftover turkey in the freezer and this recipe sure beats sandwiches.
My changes... I used a can of tomato sauce and a pinch of sugar instead of a can of condensed tomato soup, and I added a sprinkling of cayenne pepper for a little heat. Try making it with shredded chicken, ground beef, or veggie-only if you don't have {leftover} turkey on hand.

MG this looks like my two oldest men would love it! I like your idea of replacing the condensed soup! I have everything except the cilantro and I'm off to the grocery in the morning! :) Yum!

yum. I have been ill as well. Tonight I got all the fixings ready to make Lasagna Soup. I didn't have enough energy to do it today, but think I will tomorrow.

Betsy -- I should also add that I left out the chicken broth cubes because I didn't have them.
On its own I thought the soup was a bit under-spicy but using a hotter salsa or adding cayenne will give it more zip. Enjoy!
Yamini -- Everyone is on the mend now, although Tukes is till coughing a good bit. I never caught the illness but my springtime allergies have kicked into overdrive. {sniff!}
