Give me a plate of breads and spreads and I'll happily make it a meal. These days I'm hung up on tomato sandwiches slathered with Cucumber-Dill Spread. It's cool and fresh, light and delicious... an oh-so-summery lunch.
Ooh, that does look refreshing. Lately I've been on an egg-salad kick. I remember you posting pics of that once... I'll have to see if I can find it... :)
When I was sick as a child, I remember begging for tomato bacon sandwiches-- it was the only thing I wanted to eat. How strange is that? And you know how lovely pale pink hot house tomatoes are in the midst of winter! ugh! Mom would still splurge and buy them for me. I still love them. I'll have to try your variation. yum!
this sounds so refreshing and nutritious on the right whole grain bread...just like in my cupboard. to bad tomatoes I have found in Mexico are not so nice.
Tried this yesterday and, oh, so yum! I used a little garlic salt instead of regular salt. Hubby added a slice of turkey meat to his sandwich. Thanks for the inspiration!

Fresh tomatoes, just chilled with miracle whip on wheat bread is my choice. Beautiful photo and now I'm thinking cucumber dressing?
