
Got more fresh spinach than you can finish?
Don't waste it, freeze it.

Boil a large pot of water and add the crisp leaves.

Blanche for two minutes at a rolling boil.
Drain and plunge in ice water to cool promptly.
Freeze in freezer bags for future recipes.

You're so right! I usually only think of "preserving" in the summer, but it's simply of a matter of not wasting food. Thanks for a good reminder.
Great idea! We always freeze cooked brown-rice and it's also a time saver because we just cook it in one huge batch. I think if I had frozen spinach I would use it more...

It also makes great baby food! I steam it, puree it, and freeze it in a mini muffin pan, then pop 'em out and store 'em in ziplocks...Little Bit ADORES the stuff.
You can also freeze, without blanching, in portion sizes for using in green smoothies. The color doesn't matter in the smoothie, since it is blended.
I am so planning to do more of this as the weather warms and more good things come into season! I hope to can tomatoes this summer. We'll see!

Now, tell me. Do you have any secrets for keeping your cast iron pot so white and pretty? I find mine such a challenge to scrub w/o damaging the finish.
Why haven't I ever done this? I used to be part of a local farm co-op and sometimes couldn't get the spinach used up--shoulda done this!!
