Chocolate Refrigerator Cake



When she was my age, the professor's grandmother served it to her bridge club. My mother ate it in the sorority house when she was in college. I served it for dessert when Beth came to visit. Why have folks have been enjoying Chocolate Refrigerator Cake for generations? It's easy to prepare and oh so delicious!

Chocolate Refrigerator Cake

1 tsp. vanilla
2 Tbls. sugar
2 cups heavy whipping cream
1 9-ounce package Nabisco Famous Chocolate Wafers

Pour whipping cream into a chilled, metal mixing bowl. Add vanilla. While whipping the cream with an electric mixer gradually add the sugar. Mix until light and fluffy. Spread one heaping teaspoon of whipped cream onto each wafer. Stack wafers together then stand on edge to form a log {do this part on a pretty serving platter}. Spread remaining whipped cream all over the top and sides. Garnish with shaved chocolate. Refrigerate four hours, or overnight. Serve chilled. To plate, slice diagonally into twelve slices.

Mama made this when I was little. We called it "zebra cake." I think it pairs wonderfully with coffee for breakfast.

I kept meaning to ask you what the refrigerator cake was! So glad you explained.
Am I terribly out of it if I don't know what chocolate wafers are?

It's been in the 90s here - I know I'm going to make this.

I'm quite fascinated with the "old-fashioned" refrigerator cake. I think it's because I don't have an American heritage through grandparents or parents who grew up in the US. It's all new to me! As a side note...isn't it fantastic that every culture has versions of the same thing. Refrigerator cakes are akin to Tiramisu, no?
