
My father-in-law was out of town on Father's Day so we threw together a casual, impromptu picnic-style {it's too hot for a real picnic} family meal this past weekend. Barbeque with a selection of cool sides made it easy; when the heat index is 103 and the humidity is high there will be no using the oven!
Thank you for answering my call for help by sharing your simple supper suggestions. I'm feeling inspired to cook once again... despite the heat and these crazy baby days.

Fruit makes a perfect summer meal! When my nieces were little and my brother was out of town, my sister-in-law's favorite family meal to serve was always bagels, yogurt and fruit. Perfectly balanced!
I drew a total blank when you asked for suggestions, and then this afternoon while I was trying to peice together a meal I remembered one of our favorites!
1 Roast
1 jar of sliced pepperocini peppers
1 can of cream of mushroom soup
Put all 3 in the crockpot and cook (low 6-8, high 3-4 hours).
In the summer, I serve it pulled on tortillas. Add a little sour cream.
Along the same line:
1 Roast
1 bottle of Chipotle Lime marinade (or similar)
1 can cream of mushroom soup.
Again, served on a bun or tortillas.
